Ingredients

  • 2-4 Tbsp. butter or margarine
  • 5 large potatoes, peeled and cut in 1/8 inch slices
  • 1 small onion, chopped
  • Salt and pepper to taste
  • 1 (8 oz.) can Italian tomato sauce
  • 1 pkg. (3 1/2 oz.) pepperoni
  • 2 c. mozzarella cheese

Method

  • In a large non stick skillet, melt butter.
  • Cook potatoes and onion on low heat until tender (about 20 minutes).
  • Salt and pepper to taste.
  • When potatoes are done, top with tomato sauce, pepperoni and cheese.
  • Cover and cook on low heat until heated through and cheese is melted.
