Ingredients
- 3 Tbsp. salad oil
- 1 1/2 c. diced meat (can use any kind of leftover meat or 1 can Spam)
- 1/2 c. diced carrots
- 1/2 c. diced celery
- 3 green onions (including tops), chopped fine
- 4 c. cooked rice
- 2 scrambled eggs
- 2 Tbsp. soy sauce
- salt and pepper
Method
- Heat oil in wok.
- Saute carrots and celery.
- Add meat and rice.
- Stir well until each grain of rice separates and is heated through.
- Add scrambled eggs and soy sauce.
- Turn off heat and add green onions and salt and pepper to taste.
- (You can also use any kind of vegetables.)
- Serves 6.
