Ingredients

  • 3 Tbsp. salad oil
  • 1 1/2 c. diced meat (can use any kind of leftover meat or 1 can Spam)
  • 1/2 c. diced carrots
  • 1/2 c. diced celery
  • 3 green onions (including tops), chopped fine
  • 4 c. cooked rice
  • 2 scrambled eggs
  • 2 Tbsp. soy sauce
  • salt and pepper

Method

  • Heat oil in wok.
  • Saute carrots and celery.
  • Add meat and rice.
  • Stir well until each grain of rice separates and is heated through.
  • Add scrambled eggs and soy sauce.
  • Turn off heat and add green onions and salt and pepper to taste.
  • (You can also use any kind of vegetables.)
  • Serves 6.
