Ingredients

  • 1 stick Unsalted Butter
  • 1/2 cups Brown Sugar
  • 1 cup White Sugar
  • 1/4 teaspoons Salt
  • 3 Eggs
  • 1/4 cups Non-fat Plain Greek Yogurt
  • 1-1/2 teaspoon Vanilla Extract
  • 1 cup Unsweetened Cocoa Powder
  • 1 cup All-purpose Flour
  • 15 Andes Peppermint Crunch Mints, Unwrapped, Or As Needed

Method

  • 1. Preheat oven to 350°F. Spray an 8x8 baking pan with nonstick cooking spray. Set aside.
  • 2. In a medium saucepan, melt butter over medium heat.
  • 3. Once butter is completely melted, remove from heat and whisk in brown sugar, white sugar, and salt until smooth.
  • 4. Add in eggs, yogurt, and vanilla, whisking well until combined.
  • 5. Add in cocoa powder and flour, stirring until just combined.
  • 6. Pour batter into prepared pan and bake for 25-30 minutes or until middle is set and toothpick inserted into center comes out with a few crumbs.
  • 7. Remove brownies from oven and immediately place mints on top layer of brownies.
  • 8. Let sit for several minutes to melt the mints. Using a knife or spatula, swirl the mints to create a frosting, spreading it out in an even layer across brownies.
  • 9. Let cool completely in pan until frosting has hardened.
  • 10. Cut into bars and serve.
