Ingredients
- 1 stick Unsalted Butter
- 1/2 cups Brown Sugar
- 1 cup White Sugar
- 1/4 teaspoons Salt
- 3 Eggs
- 1/4 cups Non-fat Plain Greek Yogurt
- 1-1/2 teaspoon Vanilla Extract
- 1 cup Unsweetened Cocoa Powder
- 1 cup All-purpose Flour
- 15 Andes Peppermint Crunch Mints, Unwrapped, Or As Needed
Method
- 1. Preheat oven to 350°F. Spray an 8x8 baking pan with nonstick cooking spray. Set aside.
- 2. In a medium saucepan, melt butter over medium heat.
- 3. Once butter is completely melted, remove from heat and whisk in brown sugar, white sugar, and salt until smooth.
- 4. Add in eggs, yogurt, and vanilla, whisking well until combined.
- 5. Add in cocoa powder and flour, stirring until just combined.
- 6. Pour batter into prepared pan and bake for 25-30 minutes or until middle is set and toothpick inserted into center comes out with a few crumbs.
- 7. Remove brownies from oven and immediately place mints on top layer of brownies.
- 8. Let sit for several minutes to melt the mints. Using a knife or spatula, swirl the mints to create a frosting, spreading it out in an even layer across brownies.
- 9. Let cool completely in pan until frosting has hardened.
- 10. Cut into bars and serve.
