Ingredients

  • 2 lb. round steak
  • 1 1/3 c. flour
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. oil
  • 1 (1 lb. 12 oz.) can tomatoes
  • 2 medium onions, sliced
  • 1 clove garlic, minced
  • 1/4 c. red wine or water
  • 2 green peppers, sliced
  • 1/2 c. sliced ripe olives (optional)

Method

  • Cut meat in serving pieces.
  • Combine flour, salt and pepper; pound into meat.
  • Brown in hot oil.
  • Add tomatoes, onions, garlic and wine.
  • Cover; simmer 1 1/2 hours.
  • Add peppers and olives; cook 15 minutes, or until peppers are tender.
  • Serve with rice. Serves 6.
