Ingredients

  • Pomodoro sauce (separate recipe)
  • 1 med onion sliced thin
  • 1 med zucchini thickly diced
  • 1 yellow pepper sliced thickly
  • 1 cup sliced mushrooms
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes
  • 1 cup peas
  • 1 lb penne pasta

Method

  • Place onion, zucchini, pepper and mushrooms on baking sheet. Season with salt. Drizzle with olive oil. Broil at 400 until almost tender, about 10 minutes, turning veggies halfway through. Add cherry tomatoes and peas and broil for 2 minutes more. Add veggies to pasta and sauce.
