Ingredients

  • 1 (15 ounce) can pigeon peas
  • 1 14 cups rice
  • 1 cup rice
  • 1 cup diced yellow pepper
  • 1 cup diced red pepper
  • 1 cup diced carrot
  • 3 tablespoons sugar
  • 2 tablespoons canola oil
  • 1 14 lbs cubed beef
  • 1 tablespoon minced garlic
  • 2 tablespoons barbecue sauce
  • 1 teaspoon seasoning salt
  • water

Method

  • Heat the oil and sugar together, over medium heat, in a large stock pot.
  • When sugar begin to brown and bubble, add beef and stir for 4 minutes.
  • Add rice and cook for 3 minutes.
  • Add remaining ingredients.
  • Add enough water where water come 1/4 inch over ingerdients.
  • Cover and simmer for 30-40 until water is absorbed.
