- 1 (15 ounce) can pigeon peas
- 1 14 cups rice
- 1 cup rice
- 1 cup diced yellow pepper
- 1 cup diced red pepper
- 1 cup diced carrot
- 3 tablespoons sugar
- 2 tablespoons canola oil
- 1 14 lbs cubed beef
- 1 tablespoon minced garlic
- 2 tablespoons barbecue sauce
- 1 teaspoon seasoning salt
- water
Method
- Heat the oil and sugar together, over medium heat, in a large stock pot.
- When sugar begin to brown and bubble, add beef and stir for 4 minutes.
- Add rice and cook for 3 minutes.
- Add remaining ingredients.
- Add enough water where water come 1/4 inch over ingerdients.
- Cover and simmer for 30-40 until water is absorbed.
