Ingredients

  • 1/2 tsp. baking soda
  • 1 c. buttermilk
  • 1 c. cornmeal
  • 1/2 c. flour
  • 1 tsp. salt
  • 2 eggs
  • 1/2 c. oil
  • 1 onion, chopped
  • 1/2 lb. Cheddar cheese, grated
  • 1 can black-eyed peas, drained slightly
  • 1 can green chilies
  • 1 small can cream-style corn
  • 1 lb. ground meat, browned with onions and drained

Method

  • Add soda to buttermilk and set aside.
  • Mix cornmeal, flour, salt, eggs, oil and buttermilk.
  • Add peas, green chilies, corn, meat and all the grated cheese except a small amount for top. Pour into a well-greased 9 x 13-inch pan.
  • Top with remaining cheese. Bake at 350° for 45 minutes.
