Ingredients
- Pear Vinaigrette Dressing
- 1/2 medium ripe pear, peeled cored and chopped.
- 3 T pear, fig or champagne vinegar
- 1/4 tsp salt
- 3 T olive oil
- Puree the pear in blender with vinegar and salt. Drizzle in the oil, blending until emulsified
- Salad
- 10 cups spring mix
- 1/2 large fennel bulb
- 1 ripe pear
- 3-4 T crumbled blue cheese
- 3-4 tsp chopped walnuts or slivered almonds
- Pear Vinaigrette
Method
- Combilne all ingredients in a large bowl and toss. Servie right away.
