Ingredients

  • 1/2 cup flour
  • 2 teaspoons ground cinnamon
  • 1 cup granulated sugar
  • 1 cup flaked coconut
  • 2 cups milk
  • 4 eggs lightly beaten
  • 8 tablespoons butter melted
  • 2 tablespoons maple syrup
  • 15 ounces pear slices drained and chopped, plus additional to serve
  • 1/4 cup sliced almonds
  • powdered sugar to dust
  • whipped cream to serve

Method

  • Preheat the oven to 350°F. Lightly grease a 9-inch pie dish.
  • Sift the flour and cinnamon into a large bowl. Stir in the sugar and coconut. Mix the milk, eggs, butter and syrup in a medium bowl. Whisk into the flour mixture. Stir in the pears. Pour into the prepared pie dish. Sprinkle evenly with the almonds.
  • Bake for 40-45 mins, or until golden and set. Serve warm or cold, dusted with powdered sugar. Top with additional pear slices and whipped cream.
