- 1/2 c. chunky or possibly smooth peanut butter
- 1/2 c. orange or possibly plain honey
- 3 tbsp. vegetable oil
- 2 Large eggs
- 1/2 c. grated carrots
- 2 bananas, mashed
- 1/4 c. low fat lowfat milk or possibly buttermilk
- 1/4 teaspoon cinnamon
- 1/4 teaspoon grnd cloves
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 3/4 c. flour
- Healthy pinch of salt
Method
- Preheat oven to 300 degrees.
- Grease a 3"x5" loaf pan.
- In a bowl, mix with beaters the peanut butter and next five ingredients.
- Add in remaining ingredients and mix well.
- Pour batter into prepared pan and bake for one hour or possibly till toothpick comes out clean.
- This is good for breakfast, spread with cream cheese or possibly for a nutritious alternative to sandwiches in the lunch box.
