Ingredients

  • 1/2 c. chunky or possibly smooth peanut butter
  • 1/2 c. orange or possibly plain honey
  • 3 tbsp. vegetable oil
  • 2 Large eggs
  • 1/2 c. grated carrots
  • 2 bananas, mashed
  • 1/4 c. low fat lowfat milk or possibly buttermilk
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon grnd cloves
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking pwdr
  • 1 teaspoon baking soda
  • 1 3/4 c. flour
  • Healthy pinch of salt

Method

  • Preheat oven to 300 degrees.
  • Grease a 3"x5" loaf pan.
  • In a bowl, mix with beaters the peanut butter and next five ingredients.
  • Add in remaining ingredients and mix well.
  • Pour batter into prepared pan and bake for one hour or possibly till toothpick comes out clean.
  • This is good for breakfast, spread with cream cheese or possibly for a nutritious alternative to sandwiches in the lunch box.
