Ingredients

  • 3/4 c. flour
  • 1/2 tsp. salt
  • 1 (3 oz.) pkg. vanilla pudding (not instant)
  • 1 egg
  • 1 tsp. baking powder
  • 3 Tbsp. soft butter
  • 1/2 c. milk

Method

  • Grease 9-inch pie plate.
  • Combine ingredients.
  • Beat 2 minutes at medium speed.
  • Pour into pie plate.
  • Drain 1 (15 ounce) can peaches (fresh is good too), saving 3 tablespoons juice.
  • Pour peaches over mixture.
  • Mix and beat 2 to 3 minutes 1 ounce package cream cheese, 3 tablespoons peach juice and 1/2 cup sugar.
  • Spoon cheese mixture to 1 inch of edge of pie plate.
  • Sprinkle with sugar and cinnamon.
  • Bake 30 to 35 minutes at 350° or until golden brown.
  • Cool and refrigerate.
