- 3/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/4 c. dry instant vanilla pudding mix
- 1/3 c. sugar
- 1/4 tsp. nutmeg
- 3 Tbsp. butter, softened
- 1 egg
- 1/2 c. milk
- 1 (16 oz.) can sliced peaches, drained (reserve juice)
- 1/2 tsp. vanilla
- 8 oz. cream cheese, softened
- 1/2 c. sugar
- 3 Tbsp. reserved juice
- 1/2 tsp. cinnamon
- 1 Tbsp. sugar
Method
- Grease bottom of deep dish (9-inch) pie plate.
- Mix together flour, baking powder, salt, pudding, 1/3 cup sugar, nutmeg, butter, egg and milk.
- Pour into pie plate.
- Arrange peach slices over mixture, keeping 1/4-inch from edge.
- Mix vanilla, cream cheese, 1/2 cup sugar and reserved juice.
- Spread over peaches, keeping from edge.
- Combine cinnamon and 1 tablespoon sugar and sprinkle over cream cheese mixture.
- Bake at 350° for 45 to 55 minutes until crust is browned.
