Ingredients

  • 3/4 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. dry instant vanilla pudding mix
  • 1/3 c. sugar
  • 1/4 tsp. nutmeg
  • 3 Tbsp. butter, softened
  • 1 egg
  • 1/2 c. milk
  • 1 (16 oz.) can sliced peaches, drained (reserve juice)
  • 1/2 tsp. vanilla
  • 8 oz. cream cheese, softened
  • 1/2 c. sugar
  • 3 Tbsp. reserved juice
  • 1/2 tsp. cinnamon
  • 1 Tbsp. sugar

Method

  • Grease bottom of deep dish (9-inch) pie plate.
  • Mix together flour, baking powder, salt, pudding, 1/3 cup sugar, nutmeg, butter, egg and milk.
  • Pour into pie plate.
  • Arrange peach slices over mixture, keeping 1/4-inch from edge.
  • Mix vanilla, cream cheese, 1/2 cup sugar and reserved juice.
  • Spread over peaches, keeping from edge.
  • Combine cinnamon and 1 tablespoon sugar and sprinkle over cream cheese mixture.
  • Bake at 350° for 45 to 55 minutes until crust is browned.
