Ingredients

  • 1 tsp. baking powder
  • 1 (3 oz.) vanilla pudding
  • 3 Tbsp. butter
  • 1/2 c. milk
  • 1 egg
  • 1/2 c. plain flour
  • 1/2 tsp. salt
  • 1 (16 oz.) can peaches, drained
  • 1 (8 oz.) cream cheese
  • 1/2 c. sugar
  • 4 Tbsp. fruit juice
  • 1/2 tsp. cinnamon
  • 1 tsp. sugar

Method

  • Mix first 7 ingredients.
  • Beat 5 minutes and pour in 10-inch pan.
  • Drain sliced peaches.
  • Place fruit over batter (save juice). Mix for 2 minutes cream cheese, 4 tablespoons fruit juice and 1/2 cup sugar.
  • Spoon over fruit and batter.
  • Keep 1/2-inch from edge. Mix cinnamon and 1 teaspoon sugar.
  • Sprinkle over cake.
  • Bake at 350° for 35 minutes.
  • Cake will not look done.
