Ingredients

  • FOR THE OATMEAL MIXTURE:
  • 1/2 cups Flour
  • 2/3 cups Brown Sugar
  • 1/2 cups Oats
  • 1 teaspoon Cinnamon
  • 1/2 teaspoons Nutmeg
  • 1/3 cups Butter, Cold, Plus Extra For Ramekins
  • FOR THE PEACHES:
  • 7 whole Peaches: Peeled, Pitted And Sliced
  • 2 Tablespoons Sugar For Sprinkling
  • 1 teaspoon Cinnamon
  • 1 teaspoon Almond Extract

Method

  • For the oatmeal mixture: In a bowl, mix together flour, brown sugar, oats, cinnamon and nutmeg. Cut in the cold butter using a pastry blender or fork until mixture resembles coarse peas.
  • For the peaches: In a separate bowl, peel, pit and slice peaches. Sprinkle with sugar, cinnamon and almond extract. Toss to coat.
  • Rub 4 large ramekins with butter and spoon peaches into the bottom of the dishes. Top with oatmeal mixture.
  • Bake at 375-400°F for 20 minutes, until bubbly and golden.
