Ingredients

  • 1 cup frozen peas, blanched
  • 1 cup frozen fava beans, blanched and skins removed
  • 7 oz feta cheese, broken into pieces
  • 1 cup mint leaves, shredded
  • 2 None lemons, grated
  • 2 cloves garlic, thinly sliced
  • 3 None eggs, lightly beaten
  • 1/4 cup flour
  • 1/4 cup beer
  • 2 tbsp butter
  • 2 tbsp olive oil

Method

  • Mix all ingredients, except butter and oil, in a large bowl.
  • Heat butter and oil in a large nonstick skillet on medium heat. Cook 1/4-cup amounts of batter until golden on both sides.
  • Season to taste. Serve hot with a salad.
