Ingredients

  • 4 eggs, separated
  • 2 Tbsp. sugar
  • 2 tsp. cornstarch
  • 1 tsp. white vinegar
  • 1/3 c. sugar
  • 4 Tbsp. lemon juice
  • whipped cream

Method

  • Bring egg whites to room temperature.
  • Beat until they are really stiff; they look dry.
  • Mix together sugar and cornstarch. Add to egg whites and mix in very fast.
  • Add vinegar and beat only enough to mix.
  • Form mixture in a mounded circle on aluminum foil, greased very lightly.
  • Flatten top.
  • Heat oven to 300°, turn down to 225°; bake for 45 minutes.
  • Turn oven off for 30 minutes; do not open during this time.
  • Turn upside down on plate.
