- Crust
- 1 cup flour, all-purpose
- 1/2 cup butter or margarine
- 1/4 cup powdered sugar
- 1 pinch salt
- Filling
- 2 large eggs
- 1 cup sugar
- 2 tablespoons flour, all-purpose
- 3 tablespoons lemon juice
- 1 teaspoon lemon zest grated
- 1/4 teaspoon baking powder
Method
- Oven 350F (180C).
- FOR CRUST: Cream butter, sugar, add flour and salt.
- Press into 8 x 8 inch pan.
- Bake 20 minutes at 350.
- FOR FILLING: Combine ingredients.
- Pour over hot crust.
- Bake 20 to 25 minutes.
- Sprinkle with powdered sugar.
- Cool in pan.
- Cut in squares.
- Store in tin box between layers of wax paper.
