Ingredients

  • Crust
  • 1 cup flour, all-purpose
  • 1/2 cup butter or margarine
  • 1/4 cup powdered sugar
  • 1 pinch salt
  • Filling
  • 2 large eggs
  • 1 cup sugar
  • 2 tablespoons flour, all-purpose
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest grated
  • 1/4 teaspoon baking powder

Method

  • Oven 350F (180C).
  • FOR CRUST: Cream butter, sugar, add flour and salt.
  • Press into 8 x 8 inch pan.
  • Bake 20 minutes at 350.
  • FOR FILLING: Combine ingredients.
  • Pour over hot crust.
  • Bake 20 to 25 minutes.
  • Sprinkle with powdered sugar.
  • Cool in pan.
  • Cut in squares.
  • Store in tin box between layers of wax paper.
