Ingredients

  • 2 c. macaroni (Garden rotino or Twist Two)
  • 1 stalk celery, chopped
  • Italian dressing (free Italian fat-free dressing is good)
  • chopped carrots (optional)
  • olives (optional)
  • 1/2 bell pepper, chopped
  • 1/2 small onion or green onions may be used
  • chopped tomatoes (optional)
  • Parmesan cheese

Method

  • Cook macaroni according to directions.
  • Drain and rinse in cold water.
  • This prevents pasta from sticking together.
  • Let cool.
  • Mix vegetables into macaroni using enough Italian dressing to make pasta moist.
  • Sprinkle Parmesan cheese heavily or to taste over pasta.
  • Mix well.
  • Store in airtight container in refrigerator until ready to serve.
  • Better after setting for awhile.
