Ingredients

  • 4 None eggs
  • 3/4 cup sugar
  • 8 tbsp (1 stick) butter, chopped
  • 6 None passionfruit, pulp scooped out
  • 3 None lemons, peel finely grated from 1 lemon, lemons juiced

Method

  • Whisk eggs and sugar in a medium heatproof bowl until combined. Place bowl over a saucepan of gently simmering water.
  • Gradually add butter, passionfruit pulp, lemon peel and juice, and 1/4 cup water. Whisk on low heat for 10-15 mins until mixture thickens and coats the back of a wooden spoon. Do not boil.
  • Pour liquid into hot sterilized jars; seal immediately. Label and date jars when cold. Store in a cool dry place for up to 2 months. Once opened, store in the refrigerator.
