Ingredients

  • 2 or 3 diced parsnips
  • salt and pepper
  • 8 oz. Velveeta cheese
  • cracker crumbs or potato chips

Method

  • Cook parsnips until almost done in water to almost cover parsnips.
  • Remove parsnips with a slotted spoon and put in greased casserole.
  • To the parsnip water, add salt and pepper and cut chunks of cheese in simmering water.
  • Stir until melted; pour over parsnips.
  • Crumble cracker crumbs or potato chips on top.
  • Put in 375° oven until top is nicely browned.
