Ingredients
- 2 or 3 diced parsnips
- salt and pepper
- 8 oz. Velveeta cheese
- cracker crumbs or potato chips
Method
- Cook parsnips until almost done in water to almost cover parsnips.
- Remove parsnips with a slotted spoon and put in greased casserole.
- To the parsnip water, add salt and pepper and cut chunks of cheese in simmering water.
- Stir until melted; pour over parsnips.
- Crumble cracker crumbs or potato chips on top.
- Put in 375° oven until top is nicely browned.
