Ingredients
- 2 slices bacon, chopped
- 1 onion, chopped
- 1 carrot, chopped
- 1 stalk celery, chopped
- 3 tablespoons oil
- 8 chicken drumsticks
- 2 cups water
- 2 chicken stock cubes
- 240 g tomato paste
- 2 -3 fresh rosemary sprigs or 2 teaspoons dried rosemary
- 2 cups frozen broad beans
- salt & pepper
Method
- Heat 1 tblsp of the oil and saute the bacon & chopped vegetables for approx 5 mins, spoon into a large pot.
- Add the remaining oil to the pan & lightly brown the drumsticks, then add these to the pot, stir in remaining ingredients.
- Bring to the Boil, cover & simmer for 1 hour.
