Ingredients

  • 2 slices bacon, chopped
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 3 tablespoons oil
  • 8 chicken drumsticks
  • 2 cups water
  • 2 chicken stock cubes
  • 240 g tomato paste
  • 2 -3 fresh rosemary sprigs or 2 teaspoons dried rosemary
  • 2 cups frozen broad beans
  • salt & pepper

Method

  • Heat 1 tblsp of the oil and saute the bacon & chopped vegetables for approx 5 mins, spoon into a large pot.
  • Add the remaining oil to the pan & lightly brown the drumsticks, then add these to the pot, stir in remaining ingredients.
  • Bring to the Boil, cover & simmer for 1 hour.
