Ingredients
- 1 teaspoon olive oil
- 2 medium zucchini, sliced into 1/4-inch rounds
- 1 garlic clove, chopped
- 1 teaspoon lemon juice
- 1/4 cup chopped fresh basil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons shredded Parmesan cheese
Method
- Heat oil in a nonstick skillet over medium- high heat. Add zucchini and garlic; cook 4 minutes or until lightly browned. Remove from heat; stir in lemon juice and next 3 ingredients. Sprinkle with cheese. Serve immediately.
