- 2 Tbsp. grated Parmesan cheese, divided
- 1/3 c. plain low-fat yogurt
- 2 Tbsp. prepared horseradish
- 2 Tbsp. Dijon mustard
- 2 Tbsp. lemon juice
- 1 tsp. margarine, melted
- 8 (4 oz.) perch fillets
- vegetable cooking spray
Method
- Combine 1 tablespoon cheese, low-fat yogurt, horseradish, mustard, lemon juice and margarine.
- Spread evenly on one side of fillets.
- Place fillets, coated side up, on a rack coated with cooking spray.
- Place rack in broiler pan.
- Sprinkle with remaining cheese.
- Broil 6-inches from heat (with electric oven door partially opened) 18 minutes or until golden and fish flakes easily when tested with a fork.
- Yields 8 servings (127 calories, 2.4 g fat).
