Ingredients

  • 2 Tbsp. grated Parmesan cheese, divided
  • 1/3 c. plain low-fat yogurt
  • 2 Tbsp. prepared horseradish
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. lemon juice
  • 1 tsp. margarine, melted
  • 8 (4 oz.) perch fillets
  • vegetable cooking spray

Method

  • Combine 1 tablespoon cheese, low-fat yogurt, horseradish, mustard, lemon juice and margarine.
  • Spread evenly on one side of fillets.
  • Place fillets, coated side up, on a rack coated with cooking spray.
  • Place rack in broiler pan.
  • Sprinkle with remaining cheese.
  • Broil 6-inches from heat (with electric oven door partially opened) 18 minutes or until golden and fish flakes easily when tested with a fork.
  • Yields 8 servings (127 calories, 2.4 g fat).
