Ingredients

  • 2 Tbsp. olive oil
  • 2 lb. chicken breasts, skinned, boned and cut into 1/2-inch strips
  • 2 cloves garlic, crushed
  • 6 green onions, chopped
  • 4 Tbsp. Marsala wine
  • 2 Tbsp. lemon juice

Method

  • Heat a large frying pan.
  • Add oil, chicken, garlic and green onions. Saute over high heat until chicken is lightly browned and tender.
  • Remove from pan.
  • Add Marsala and lemon juice.
  • Allow liquid to reduce for a moment. Return chicken to the hot pan, salt and pepper to taste. Do not overcook.
  • Serve immediately.
