Ingredients

  • 2 c. all-purpose flour
  • 1/2 c. confectioners sugar
  • 3/4 c. butter or margarine
  • 2 eggs, beaten
  • 1 1/2 c. sugar
  • 3 c. chopped rhubarb
  • 1/4 c. all-purpose flour
  • ice cream or nondairy topping (optional)

Method

  • Blend 2 cups flour, confectioners sugar and butter in large mixing bowl.
  • Beat until fine crumbs.
  • Pat 2 cups crumb mixture firmly against bottom of 2-quart dish.
  • Cook on Level 7 for 4 1/2 to 6 1/2 minutes.
  • Turn dish halfway through cooking time.
  • Combine eggs, sugar, rhubarb and 1/4 cup flour in 2-quart casserole.
  • Blend well.
  • Cook on Full power for 8 to 11 minutes; stir frequently during cooking time.
  • Spread over crust.
  • Sprinkle remaining crumbs over rhubarb mixture.
  • Heat on Full power for 3 1/2 to 5 1/2 minutes.
  • Cool; cut into squares and top with ice cream or cream.
