Ingredients
- 2 c. all-purpose flour
- 1/2 c. confectioners sugar
- 3/4 c. butter or margarine
- 2 eggs, beaten
- 1 1/2 c. sugar
- 3 c. chopped rhubarb
- 1/4 c. all-purpose flour
- ice cream or nondairy topping (optional)
Method
- Blend 2 cups flour, confectioners sugar and butter in large mixing bowl.
- Beat until fine crumbs.
- Pat 2 cups crumb mixture firmly against bottom of 2-quart dish.
- Cook on Level 7 for 4 1/2 to 6 1/2 minutes.
- Turn dish halfway through cooking time.
- Combine eggs, sugar, rhubarb and 1/4 cup flour in 2-quart casserole.
- Blend well.
- Cook on Full power for 8 to 11 minutes; stir frequently during cooking time.
- Spread over crust.
- Sprinkle remaining crumbs over rhubarb mixture.
- Heat on Full power for 3 1/2 to 5 1/2 minutes.
- Cool; cut into squares and top with ice cream or cream.
