Ingredients
- 6 slices bacon
- 1/2 lb. cubed ham
- 1/4 c. butter
- 1 c. evaporated milk
- 1/4 tsp. salt
- 1/4 c. butter
- 1/2 c. flour
- 4 c. milk
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 16 eggs
Method
- Saute bacon. Break into pieces and return to pan. Remove half of the bacon fat.
- To the remaining fat, add the cubed ham and 1/4 cup butter.
- Sprinkle flour and mix well.
- Gradually add the milk and cook. Season with salt and pepper (1/8 teaspoon).
- Set aside. Beat eggs into evaporated milk.
- Add 1/4 teaspoon salt. Melt 1/4 cup butter in a large skillet. Add egg mixture and scramble until firm.
