Ingredients

  • 6 slices bacon
  • 1/2 lb. cubed ham
  • 1/4 c. butter
  • 1 c. evaporated milk
  • 1/4 tsp. salt
  • 1/4 c. butter
  • 1/2 c. flour
  • 4 c. milk
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 16 eggs

Method

  • Saute bacon. Break into pieces and return to pan. Remove half of the bacon fat.
  • To the remaining fat, add the cubed ham and 1/4 cup butter.
  • Sprinkle flour and mix well.
  • Gradually add the milk and cook. Season with salt and pepper (1/8 teaspoon).
  • Set aside. Beat eggs into evaporated milk.
  • Add 1/4 teaspoon salt. Melt 1/4 cup butter in a large skillet. Add egg mixture and scramble until firm.
