Ingredients
- 3 pounds mixed small new potatoes, unpeeled
- 1/4 cup extra-virgin olive oil
- 1 1/2 teaspoons coarse salt
- 1/4 teaspoon freshly ground pepper
Method
- Preheat the oven to 350F.
- Toss the potatoes with the oil, salt, and pepper in a large bowl until well coated.
- Transfer to a 9 x 13-inch metal baking dish and spread in a single layer.
- Roast, stirring occasionally, until tender, about 1 hour 15 minutes.
