Ingredients

  • 1/4 c. fine dry bread crumbs
  • 1 Tbsp. grated Parmesan cheese
  • 1/8 tsp. paprika
  • 2 c. zucchini, onion rings or cauliflower, sliced 1/4 inch thick
  • 2 Tbsp. Italian salad dressing

Method

  • Spray cold baking sheet with Pam.
  • In a 9-inch pie plate, stir together the bread crumbs, Parmesan cheese and paprika until mixed. Place vegetables in medium bowl and drizzle with salad dressing. Toss until coated.
  • Roll vegetables in crumb mixture.
  • Place in single layer on baking sheet and bake at 450° for 9 to 11 minutes or until golden brown.
