Ingredients
- 1/4 c. shortening
- 1 1/2 c. Potato Buds
- 1/3 c. grated Parmesan cheese
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 (2 1/2 to 3 lb.) broiler/fryer chicken, cut up
- 1 egg, beaten
Method
- Heat oven to 425°.
- Melt shortening in rectangular pan in oven. Mix potatoes, cheese, salt and pepper.
- Dip chicken into egg.
- Roll in potato mixture.
- Place chicken, skin side up, in pan.
- Bake uncovered until done, about 1 hour.
