Ingredients
- 1/4 c. shortening or oil
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 1/2 to 2 lb. broiler-fryer cut into quarters
- 1/8 tsp. paprika
Method
- Heat oven to 425°.
- Use a 9 x 9 x 2-inch or 11 3/4 x 7 1/2 x 1 1/2-inch pan.
- Melt shortening in pan.
- Mix flour, salt, paprika and pepper in bag.
- Shake chicken in bag, 2 to 3 pieces at a time. Place chicken skin down in pan.
- Bake uncovered 30 minutes; turn. Bake until tender, 18 to 20 minutes longer.
- Makes 2 servings.
