Ingredients
- 1 1/2 lb. large raw shrimp
- 1/2 c. all purpose flour
- 1/2 c. cornstarch
- 1 T. salt
- 1/2 T. white pepper
- 2 T. vegetable oil
- 1 c. ice water
- Vegetable oil for frying
- 2 c. unsweetened coconut, short shredded
Method
- Peel and devein shrimp. Dry well on paper towels and set aside. In a bowl, combine all dry ingredients for batter. Add 2 tablespoons of oil and ice water. Stir to blend.
