- 4 Idaho baking potatoes
- 8 oz. skinned and boned
- chicken breast, cut in strips
- 1 small carrot, sliced thin
- 1 c. thinly sliced red or green bell peppers
- 1/4 lb. snow peas
- 2 Tbsp. vegetable oil
- 1 garlic clove, cut in half
- 1 tsp. minced ginger root
- 1 Tbsp. cornstarch
- 1/2 c. chicken broth
- 2 Tbsp. soy sauce
- 2 Tbsp. plus 2 tsp. butter
- salt and pepper to taste
Method
- Wash and dry potatoes.
- With fork, pierce each twice.
- Place potatoes on paper towel in microwave.
- Cook on High for 15 to 17 minutes.
- Remove and set aside.
