Ingredients

  • 4 Idaho baking potatoes
  • 8 oz. skinned and boned
  • chicken breast, cut in strips
  • 1 small carrot, sliced thin
  • 1 c. thinly sliced red or green bell peppers
  • 1/4 lb. snow peas
  • 2 Tbsp. vegetable oil
  • 1 garlic clove, cut in half
  • 1 tsp. minced ginger root
  • 1 Tbsp. cornstarch
  • 1/2 c. chicken broth
  • 2 Tbsp. soy sauce
  • 2 Tbsp. plus 2 tsp. butter
  • salt and pepper to taste

Method

  • Wash and dry potatoes.
  • With fork, pierce each twice.
  • Place potatoes on paper towel in microwave.
  • Cook on High for 15 to 17 minutes.
  • Remove and set aside.
