Ingredients

  • 4 cups napa cabbage or 4 cups Chinese cabbage
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 (8 ounce) can water chestnuts, drained and sliced
  • 1 cup cilantro or 1 cup parsley, chopped
  • 14 cup scallion, sliced
  • 14 cup low-fat mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon ginger, grated

Method

  • Combine first five ingredients.
  • Cover and chill in refrigerator at least 1 hour.
  • Combine next three ingredients.
  • Cover and chill in refrigerator at least 1 hour.
  • Toss dressing with cabbage mixture and serve.
