Ingredients
- salt and pepper
- 4 extra thick loin pork chops
- 3 medium-size sweet potatoes, boiled and sliced
- pinch of nutmeg
- 1 can apricots (No. 2 1/2) with juice
Method
- Salt and pepper chops.
- Brown on both sides in their own fat in a skillet.
- Transfer to a casserole dish;
- add sliced sweet potatoes and sprinkle with nutmeg.
- Pour apricots and juice over all and bake 50 minutes in a 350° oven.
- Serves four.
