Ingredients
- 1/4 c. oil
- juice of 2 lemons
- 2 large cloves of garlic, unpeeled
- 1 1/2 tsp. oregano
- 3/4 tsp. salt
- 3/4 tsp. pepper
- 1/2 tsp. cumin
- 2 to 3 lb. chicken, cut into pieces
- 1 1/2 lb. potatoes, cut into 1/4 or 1/2 pieces
Method
- Preheat oven to 425°.
- In roasting pan combine all ingredients, except chicken and potatoes.
- Add chicken and potatoes and toss to coat.
- Arrange chicken, skin side up.
- Bake 50 minutes; stir occasionally.
