Ingredients

  • 1 lb. beef steak, cut into small pieces
  • 4 slices bacon
  • 1 large onion
  • 2 cloves garlic
  • 1 or 2 Tbsp. flour
  • 1 can tomato paste
  • 2 Tbsp. chili powder
  • 1 1/2 Tbsp. cumin seed
  • 1 Tbsp. oregano
  • 1 can red kidney beans or pinto beans, cooked
  • salt to taste

Method

  • Cut bacon fine.
  • Saute bacon, onion and garlic together in skillet.
  • Add meat to this; sprinkle with flour and cook until meat is brown.
  • Put this mixture into large pot.
  • Add 1 can of tomato paste, the chili powder, the cumin and the oregano.
  • Add a quart of water and simmer until meat is tender, about 1 hour.
  • Add can of beans and continue cooking about 20 to 30 minutes longer, stirring occasionally, to prevent burning.
