Ingredients

  • 1/2 cup coconut flour
  • 1/2 cup almond meal
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 orange
  • 1 orange
  • 1 teaspoon lemon zest
  • 2 teaspoons vanilla
  • 3 eggs 1 egg white
  • 1/3 cup whole milk
  • 1/4 cup olive oil
  • 1/4 cup coconut oil melted and cooled
  • 1/8 cup honey
  • 1/2 cup greek yogurt
  • 1 teaspoon vanilla extract

Method

  • Preheat oven to 350F and prepare a cake pan.
  • In a medium bowl whisk the coconut flour, almond meal, salt, and baking soda.
  • In a small bowl stir in the orange zest, juice, lemon zest, vanilla, eggs, olive oil, coconut oil, and honey.
  • Pour the wet into the dry and mix.
  • Pour batter into cake pan and even out.
  • Bake for 30 minutes and cool.
  • For the "frosting" in a small bowl mix the yogurt, vanilla, and milk. I didn't measure the milk but I wanted the consistency to be like a glaze.
  • Pour "frosting" onto cake right before serving.
