Ingredients

  • 3 Tbsp. olive oil
  • 1/2 c. sliced onion
  • 2 c. thinly sliced zucchini
  • 1 tsp. dried oregano
  • 1 tomato, chopped
  • 1 lb. orange roughy, cut in serving size pieces
  • salt and pepper to taste
  • 1/2 c. grated Provolone cheese

Method

  • Heat oil in a large skillet.
  • Add onion, zucchini and oregano. Saute over medium-high heat, stirring often, for about 4 minutes. Place tomato and fish over vegetables in skillet.
  • Sprinkle fish with salt and pepper. Cover skillet, reduce heat and simmer until fish is opaque and flakes easily with a fork, about 1 1/2 minutes. Serve immediately. Top with grated cheese just before serving. Serves 4.
