Ingredients
- 3 Tbsp. olive oil
- 1/2 c. sliced onion
- 2 c. thinly sliced zucchini
- 1 tsp. dried oregano
- 1 tomato, chopped
- 1 lb. orange roughy, cut in serving size pieces
- salt and pepper to taste
- 1/2 c. grated Provolone cheese
Method
- Heat oil in a large skillet.
- Add onion, zucchini and oregano. Saute over medium-high heat, stirring often, for about 4 minutes. Place tomato and fish over vegetables in skillet.
- Sprinkle fish with salt and pepper. Cover skillet, reduce heat and simmer until fish is opaque and flakes easily with a fork, about 1 1/2 minutes. Serve immediately. Top with grated cheese just before serving. Serves 4.
