Ingredients

  • 4 chicken breasts, boiled, deboned and cubed
  • 1 can Ro-Tel tomatoes, mashed
  • 1 lb. Velveeta cheese, cubed
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1/2 stick butter, melted
  • 1 (12 oz.) pkg. egg noodles, cooked

Method

  • Cook noodles in broth until tender; drain. Saute butter, onions and bell pepper; add Ro-Tel tomatoes and cheese.
  • Stir until cheese melts. Add remaining ingredients. Stir in large casserole dish. Bake at 350° for 15 minutes.
