Ingredients

  • 2 eggs
  • 1/2 cup caster sugar
  • grated rind of 1 orange King Sooper's 1 lb For $0.99 thru 02/09
  • 250g block PHILADELPHIA Cream Cheese, softened
  • 100g almond meal
  • 1 tablespoon poppy seeds
  • 1 cup gluten free plain flour
  • 2 teaspoons gluten free baking powder
  • 1/4 cup milk
  • 1-2 tablespoons orange marmalade
  • extra 1/4 cup marmalade to serve

Method

  • Beat the eggs and sugar until thick and creamy, fold through the orange rind, half the Philly*, almond meal and poppy seeds.
  • Sift together the flour and baking powder, fold through the mixture alternately with the milk.
  • Spoon into a greased and base lined 1/2 cup muffin pan to make 10.
  • Bake in a moderate oven 180C for 20-30 minutes or until cooked and golden.
  • Combine the remaining Philly* with the marmalade and use as a spread for the muffins.
  • Top with extra marmalade, if desired.
