Ingredients

  • 2 Tbsp. brown sugar
  • 2 tsp. flour
  • 1 tsp. butter, melted
  • 1/4 tsp. ground cinnamon
  • 1 c. flour
  • 1 c. quick cooking oats (uncooked)
  • 1/2 c. chopped pecans
  • 1/4 c. sugar
  • 2 tsp. grated orange rind
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. orange juice
  • 1/4 c. milk
  • 3 Tbsp. vegetable oil
  • 1 egg, beaten

Method

  • Combine first four ingredients, mixing until crumbly.
  • Set aside.
  • Combine next seven ingredients in a medium mixing bowl, stirring well.
  • Make a well in the center of mixture.
  • Combine orange juice, milk, oil and egg.
  • Add to dry ingredients; stir just until moistened.
  • Spoon mixture into greased muffin pans, filling 3/4 full.
  • Sprinkle with cinnamon mixture.
  • Bake at 425° for 15 minutes.
  • Makes 1 dozen.
