- 2 Tbsp. brown sugar
- 2 tsp. flour
- 1 tsp. butter, melted
- 1/4 tsp. ground cinnamon
- 1 c. flour
- 1 c. quick cooking oats (uncooked)
- 1/2 c. chopped pecans
- 1/4 c. sugar
- 2 tsp. grated orange rind
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. orange juice
- 1/4 c. milk
- 3 Tbsp. vegetable oil
- 1 egg, beaten
Method
- Combine first four ingredients, mixing until crumbly.
- Set aside.
- Combine next seven ingredients in a medium mixing bowl, stirring well.
- Make a well in the center of mixture.
- Combine orange juice, milk, oil and egg.
- Add to dry ingredients; stir just until moistened.
- Spoon mixture into greased muffin pans, filling 3/4 full.
- Sprinkle with cinnamon mixture.
- Bake at 425° for 15 minutes.
- Makes 1 dozen.
