Ingredients

  • 1 cake yeast
  • 1 Tbsp. sugar
  • 1 c. orange juice
  • 1 tsp. salt
  • 1 Tbsp. butter
  • 1 tsp. grated orange rind
  • 3 c. sifted flour
  • 1/3 c. sugar
  • 1/2 c. shredded candied orange peel

Method

  • Combine yeast and sugar.
  • Let stand a few minutes.
  • Heat orange juice to lukewarm and add to yeast.
  • Add remaining ingredients, except candied orange peel.
  • Beat well.
  • Let rise until doubled in bulk.
  • Knead in orange peel on well floured board.
  • Shape into a loaf and let rise until doubled in bulk, or until light.
  • Bake in moderate oven (375°) 30 to 40 minutes. Makes 1 loaf.
