Ingredients

  • 1 14 cups all-purpose flour
  • 34 cup whole wheat flour
  • 12 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cardamom
  • 12 teaspoon salt
  • 2 large eggs
  • 1 (19 ounce) can kidney beans, rinsed and drained
  • 23 cup orange juice
  • 14 cup cooking oil
  • 2 teaspoons orange zest
  • 14 teaspoon almond extract

Method

  • pre-heat oven to 375 degrees F.
  • mix first 6 ingeredients in a large bowl.
  • make a well in the centre.
  • process the next 6 ingredients in a blender until smooth.
  • add to well in flour mixture, and stir until just moistened.
  • fill 12 greased muffin cups 3/4 full.
  • bake for 20 minutes (until a wooden pick inserted in the centre comes out clean).
  • let rest in pan for 5 minutes, then remove muffins to a wire rack to cool.
