Ingredients

  • 2 c. onion, thinly sliced
  • 1/2 c. butter
  • 1/4 c. flour
  • 1/4 tsp. pepper
  • 1 1/2 tsp. salt
  • 2 c. milk
  • 2 c. beef stock
  • grated Parmesan cheese to taste

Method

  • Saute onions in butter over low heat for 20 to 30 minutes until tender and transparent.
  • Blend in flour, pepper and salt and cook over medium heat, stirring until bubbly.
  • Remove from heat and stir in milk and stock gradually.
  • Return to heat and bring to a boil, stirring constantly.
  • Add Parmesan cheese, stirring constantly for 1 minute, then serve.
