Ingredients

  • 4 c. thinly sliced onions (about 3)
  • 1 lb. baking potatoes, peeled and cut into 1/8-inch slices
  • 1/4 c. grated Parmesan cheese
  • 6 Tbsp. unsalted butter
  • 1 c. heavy cream
  • 1/4 c. grated Gruyere

Method

  • In a large skillet, cook onions with salt and pepper to taste in 3 tablespoons butter over moderate heat, stirring occasionally, until they are golden. Spoon half the onions into a buttered 2-quart gratin dish, cover them with the potato slices and sprinkle the potatoes with salt and pepper. Cover the potatoes with the remaining onions.
  • Pour the cream over the mixture and sprinkle the mixture with Parmesan and Gruyere.
  • Dot the top with 3 tablespoons butter and bake in preheated 400° oven for 30 minutes or until golden brown.
  • Serves 4 to 6.
