- 1 large red capsicum, finely chopped
- 1 large onion, finely chopped
- 2 garlic cloves, finely chopped
- 2 tablespoons olive oil
- 500 g lean lamb, cut into small strips
- 2 tablespoons pine nuts
- 300 g basmati rice
- 12 cup raisins
- 1 tablespoon cinnamon
- 1 tablespoon paprika
- 1 pinch white pepper
- 1 chicken stock cube
- 12 liter water
- 12 cup coriander leaves, chopped
- 2 tablespoons lemon juice
Method
- Chop finely the flesh of the capsicum, onion and garlic.
- Add oil to large pot, heat, then brown lamb mince.
- Stir in capsicum, onion and garlic.
- Add pine nuts, rice, raisins, cinnamon, paprika, white pepper and crumbled stock cube.
- Stir.
- Add water to cover mix.
- Cover and cook on low for 15 minutes.
- Add coriander and lemon, stir and serve.
