Ingredients

  • 1 large red capsicum, finely chopped
  • 1 large onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 tablespoons olive oil
  • 500 g lean lamb, cut into small strips
  • 2 tablespoons pine nuts
  • 300 g basmati rice
  • 12 cup raisins
  • 1 tablespoon cinnamon
  • 1 tablespoon paprika
  • 1 pinch white pepper
  • 1 chicken stock cube
  • 12 liter water
  • 12 cup coriander leaves, chopped
  • 2 tablespoons lemon juice

Method

  • Chop finely the flesh of the capsicum, onion and garlic.
  • Add oil to large pot, heat, then brown lamb mince.
  • Stir in capsicum, onion and garlic.
  • Add pine nuts, rice, raisins, cinnamon, paprika, white pepper and crumbled stock cube.
  • Stir.
  • Add water to cover mix.
  • Cover and cook on low for 15 minutes.
  • Add coriander and lemon, stir and serve.
