Ingredients
- 5 ears corn
- 3 Tbsp. butter or margarine
- 1 medium green pepper, thinly sliced crosswise
- 1/2 c. thinly sliced onion
- 4 eggs
- 2 c. milk
- 1 Tbsp. sugar
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 c. sliced cooked ham or diced chicken (optional)
Method
- Cut kernels from cobs to yield about 3 1/3 cups corn.
- In a large skillet, melt butter.
- Add corn, green pepper and onion. Cook and stir for 3 minutes.
- Remove from heat and set aside.
