Ingredients
- 2 c. thin mashed potatoes
- 1 tsp. minced parsley
- 2 eggs
- 4 Tbsp. butter
- 1 minced onion
- 1/2 c. celery
- 1 tsp. salt
- pinch of pepper
- pinch of saffron
- 7 slices toast
Method
- Melt
- butter
- in
- skillet.
- Add onion and celery.
- Cook until soft; do not burn. Beat eggs in milk.
- Mix all ingredients; put in casserole.
- Dot with butter and bake at 375° for 35 minutes or until brown.
