Ingredients
- 1 c. yellow corn meal
- 1 c. all-purpose flour
- 1 Tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 1 c. milk
- 2 Tbsp. vegetable oil
Method
- Preheat oven to 425°.
- Grease an 8-inch square baking pan. Combine cornmeal, flour, sugar, baking powder and salt in a large bowl.
- Add egg, milk and oil. Stir to make a fairly smooth batter. Pour into greased pan. Bake 20 to 25 minutes. Cool in pan or on wire rack. Cut into squares.
- Serve warm or cold.
