- 25 lb. potatoes
- 2 lb. Velveeta cheese
- 2 cans Carnation milk
- 1 lb. oleo
- 4 cans mushroom soup
- 6 cans celery soup
- 2 small jars pimentos
- 2 to 3 onions
- 2 large green peppers
Method
- Boil potatoes with peelings.
- Cool, skin and dice.
- Melt butter and saute onions and peppers.
- Add soups and milk.
- Fold in cheese until melted.
- Add pimentos.
- Pour over potatoes and cook at 300° for 45 minutes.
- Serves 75 people.
